You Will Need:

  • 1 pack It's Tasty by Gohar Raan Roast Masala
  • 2 kg (4–4.5 lbs) goat leg (raan)
  • 1 cup yogurt
  • 2–3 tbsp ginger garlic paste
  • 2–3 tbsp oil
  • 1–2 tbsp papaya paste (for tenderness)
  • 1–2 green chilies (optional)

How to Use:

  1. Soak raan in vinegar & salt water for 3–4 hours, then rinse and pat dry.
  2. Make deep cuts in the raan for better flavor absorption.
  3. In a bowl, mix yogurt, ginger garlic paste, oil, and papaya paste.
  4. Add Raan Roast Masala and mix well to form a marinade.
  5. Apply marinade thoroughly over the raan, including inside the cuts.
  6. Cover and marinate for 6–8 hours or overnight for best results.

Stovetop Method:

  1. Place the marinated raan in a heavy pot.
  2. Add 1–2 cups water, cover, and cook on low heat for 2.5–3 hours, turning occasionally, until tender.
  3. Remove the lid and cook on medium heat to reduce the gravy until thick and coating the meat.
  4. Add 1–2 tbsp oil and cook further, turning occasionally, until nicely browned.

Oven Bake Method (Recommended)

  1. Preheat oven to 325°F (160°C).
  2. Place marinated raan in a covered oven-safe dish (or wrap tightly with foil).
  3. Add ½ cup water for extra juiciness (optional).
  4. Bake for 3-4 hours until tender.
  5. Remove cover and increase heat to 400°F (200°C).
  6. Roast uncovered for 20–30 minutes until nicely browned.

Salt, Coriander, Cumin, Red Chili, Paprika, Turmeric, Ginger Powder, Garlic Powder, White Pepper, Amchur, Garam Masala, Papaya Powder (natural tenderizer)

Storage:

Store in a cool, dry place. Keep airtight after opening.
