You Will Need:
- 1 pack It's Tasty by Gohar Raan Roast Masala
- 2 kg (4–4.5 lbs) goat leg (raan)
- 1 cup yogurt
- 2–3 tbsp ginger garlic paste
- 2–3 tbsp oil
- 1–2 tbsp papaya paste (for tenderness)
- 1–2 green chilies (optional)
How to Use:
- Soak raan in vinegar & salt water for 3–4 hours, then rinse and pat dry.
- Make deep cuts in the raan for better flavor absorption.
- In a bowl, mix yogurt, ginger garlic paste, oil, and papaya paste.
- Add Raan Roast Masala and mix well to form a marinade.
- Apply marinade thoroughly over the raan, including inside the cuts.
- Cover and marinate for 6–8 hours or overnight for best results.
Stovetop Method:
- Place the marinated raan in a heavy pot.
- Add 1–2 cups water, cover, and cook on low heat for 2.5–3 hours, turning occasionally, until tender.
- Remove the lid and cook on medium heat to reduce the gravy until thick and coating the meat.
- Add 1–2 tbsp oil and cook further, turning occasionally, until nicely browned.
Oven Bake Method (Recommended)
- Preheat oven to 325°F (160°C).
- Place marinated raan in a covered oven-safe dish (or wrap tightly with foil).
- Add ½ cup water for extra juiciness (optional).
- Bake for 3-4 hours until tender.
- Remove cover and increase heat to 400°F (200°C).
- Roast uncovered for 20–30 minutes until nicely browned.
